Noah's Banana Nut Bars

I don’t actually have a photo of these because they all got eaten up!  (Note to self, take picture before serving yummy goodies to guests.)

My four year old son, Noah made these bars by himself, with just minimal guidance from me (I read the directions out loud and put them in the oven.)  Apparently all the time he has spent cooking with me in the kitchen has rubbed off on him 😉  We served them this morning at the Sunday Gathering and they were a BIG hit!  

Noah’s Banana Nut Bars

(adapted from a recipe in The Betty Crocker Cookie Book)

Ingredients:

  • 1 cup sugar
  • 1 cup mashed very ripe bananas (2 medium) -The back of a fork or an old fashioned potato masher work great for this.
  • 1/3 cup vegetable oil
  • 2 eggs (we actually used Bob’s Red Mill Egg Replacer instead of eggs to make them vegan)
  • 1 cup white-wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped nuts -A fun way to let kids chop nuts is to put the nuts in a zip top plastic bag.  Then use a rolling pin or wooden mallet to bash them up 🙂

Directions:

  1. Preheat oven to 350 deg F.  
  2. Grease 13″x9″ pan.  
  3. Mix sugar, bananas, oil and eggs (or replacement) in large bowl with a spoon.  
  4. Stir in flour, baking powder, baking soda, cinnamon and salt.
  5. Stir in nuts.
  6. Spread batter in pan (it will be thin).  
  7. Bake 25-30 minutes or until toothpick inserted in center comes out clean.
  8. Cool completely then cut into bars.
  9. Store covered in refrigerator (if you have any leftover!)
